After adjusting the maximum bandwidth and video quality settings, I was able to stream a transcoded 720p .mkv from my Mac (connected wirelessly to my network) to my ps3 without stuttering, albeit at a reduced quality using the MEncoder engine. As a test, I loaded the same .mkv file and the PS3 Media Server onto a PC wired to my local network and streamed it to my PS3 with the highest quality settings using the TsMuxer engine and it looked great...much better than it looked streaming from my Mac.
So I guess my question is, is the TsMuxer engine only available in the windows version of PS3 Media Server? I'd much rather stream my files from my Mac to the PS3 and not load all my files on my windows box to achieve the highest quality stream of 720p .mkv files. Alternatively, am I not able to stream in the highest quality from my Mac because I'm connected to my network wirelessly? From what I've been reading, my rig seems more than capable to transcode and stream 720p .mkv files (2.16 GHz Intel Core 2 Duo, 2 GB ram, running OS 10.5.6).
