Me as well. It just hangs. I tried 10 minutes and it hung for 20 minutes before I backed out.
Streamable files seem to work fine with "GO TO" though.

You can't "rollback" your FW to a specific version, not that I know of.
You can, though, restore your PS3 system:
Systems/System Settings/Restore PS3 System
"Formats the hard disk and restores the system software to it's default settings"
THEN don't do updates from then on. Doing this, you will lose all your data on your PS3 HDD, and by not updating your console, you will lose all online gaming capabilities, and a few other functions I think
So, not really, unless you want to limit your options and lose your data.
EDIT: Watching the buffer I noticed it wasn't climbing, even on a lower bitrate MKV file that I know the "GO TO" function worked on before while transcoding.
I have tried pausing the video before using "GO TO", hoping the buffer would build, but it did not help either.
