Stuttering when playing MKV file

Hi guys, I'm very new to all this Media Server stuff, so please bare with me if I'm being stupid.

My set-up is: Mac Pro, 2.26 Octo with 6GB ram. My internet connection is via wi-fi, running at approximately 20Mbps.

I'm trying to play an MKV 720p film. But it keeps stuttering and is totally unwatchable. I've tried to pause playback and then re-start it later but this also doesn't seem to work.

I've tried other media servers, which work absolutely fine... but those servers don't give me the Dolby Digital audio that this programme does

What am I doing wrong? And how can I rectify it?

Right, I played around till the very early hours last night, trying almost evert suggestion in that link.

Alas, nothing worked. The frustrating thing is that another media server streams the video to my 720p film absolutely fine but doesn't deliver me the Dolby Digital audio. This server though DOES deliver the DD audio but doesn't deliver a non-stuttering video

May just have to try burning the film to DVD and trying that option for now.
