Well : I've tried both
name = Mediatheque
and
name = "Mediatheque"
which one is the good one ?
but my TV is still displaying [PS3 Media Serve...]
(including dots).
So maybe some change occured, but if PMS keep "PS3 Media Server" before "Mediatheque" I won't be able to see any improvement as my TV truncates the label...
Do you think it's the case ? (And if yes, can I get rid of "PS3 Media Server" ...)

Not through the GUI/PMS.conf.

my TV truncates the label

Then that's an issue with your TV rather than PMS.

And if I use an Hexa Editor, could you tell me in which file I should look to edit the app name, if it's technically possible...?

You'll need to modify the source code and recompile. Here are some directions for an older version of PMS - viewtopic.php?f=6&t=3507&start=10#p17364
Not sure if they are still applicable now.
I provide NO application support via PM or email, so please post your question to the forum per the Forum Rules.

We don't encourage disguising the name as attribution is the only thing a free/open source project asks in return for its labour of love.

However, the fact that it's open source means the name can be modified if you know what you're doing (no need for a hex editor), though you're on your own figuring that out.

Your best bet is to take the truncation issue up with your TV vendor.
