Sub-Folders?

Now this might be me being a new user, but PS3 Media Server doesn't recognise content stored in sub-folders. Do you really have to add each folder one by one???

It does recognize sub-folders, and you've probably hit one of these two issues:
a) You've hit the max folder-depth limit (I think this is 8 subfolders, and it is a PS3 limitation, not PMS), in which case you will need to add some folders directly to the PMS share settings
b) You're browsing in the wrong section of the XMB for the media you're trying to play
